Tarragon and Lemon Carrots

ingredients

serves 4
450 g (1 lb) carrots, finely sliced
1 tbsp lemon juice
6 tbsps water
2 sprigs fresh tarragon
Chopped tarragon
Grated lemon zest

method

1. Put the carrots in a casserole with the lemon juice, water and tarragon.

2. Cover and cook on HIGH for 10 - 12 minutes.

3. Drain the carrots and discard the tarragon sprigs.

Garnish with chopped tarragon and lemon zest
