Sweet and spicy, this fruit salad is certainly out of the ordinary.
1 mango, peeled and cubed
1 small pineapple, skinned, cored and cubed
2 bananas, peeled and sliced
12 lychees, peeled and stone removed
2 kiwi fruit, peeled and sliced
1 small melon, peeled and cubed
2 oranges, peeled and segmented
120 g (4 oz) palm sugar, or light brown sugar
1 tsp tamarind extract
2 tbsps water
Juice of 1 lime
2.5 cm (1 inch) piece fresh ginger, grated
1/2 tsp ground nutmeg
1/4 tsp ground cinnamon
1/4 tsp ground coriander
method
1. Prepare all the fruit over a bowl, to catch the juice. Arrange the prepared fruit in a serving bowl.
2. In a small bowl, combine the sugar with the tamarind, water, lime juice and spices. Stir this into the prepared fruit, together with any fruit juice, mixing well to blend thoroughly
3. Chill the fruit salad for at least 1 hour before serving, stirring it again before you do.
