Chicken, Tomato and Mushroom Stew (Fricassee De Poulet) recipe

In French cooking, a fricassee is simply a white meat stew, cooked in white stock or sauce, and although this version is chicken, lamb and veal are also often cooked in this way.

ingredients

Fricassee de Poulet is a classic stew of chicken, tomatoes and mushrooms
2 1/2 kg (5 lb) Chicken, skinned and cut into serving pieces
50 g (2 oz) 1/2 cup Seasoned flour (flour with salt and pepper to taste)
50 ml (2 fl oz) 1/4 cup Vegetable oil
450 ml (15 fl oz) 2 cups Chicken stock
1 1/2 tsp Cornflour (cornstarch), blended with 1 Tbs water
1 Bay leaf
1 Garlic clove, crushed
6 Medium tomatoes, blanched, peeled and chopped
225 g (8 oz) 2 cups Small button mushrooms, sliced
2 Egg yolks
150 ml (5 fl oz) 5/8 cup Double (heavy) cream
1/2 tsp Paprika

method

1. Coat the chicken pieces in the seasoned flour, shaking off any excess.

2. Heat the oil in a large saucepan. Add the chicken pieces and fry until they are deeply and evenly browned. Stir in the stock, cornflour (cornstarch) mixture, bay leaf and garlic, and bring to the boil.

3. Reduce the heat to low, cover the pan and simmer for 40 minutes. Stir in the tomatoes and mushrooms and simmer for a further 20 minutes. Remove the bay leaf.

4. Transfer the chicken pieces to a warmed serving dish.

5. Combine the egg yolks and cream together. Stir about 4 tablespoons of the chicken cooking liquid into the mixture, then pour the mixture into the saucepan. Simmer gently, stirring constantly, for 3 to 5 minutes, or until the sauce thickens slightly. Take care not to let the sauce boil, or it will curdle.

6. Pour the sauce over the chicken pieces, sprinkle over the paprika and serve at once.
