Clam hash

ingredients

4 - 6 servings
75 g (3 oz) 6 Tbs Butter
1 Small onion, grated
3 Cooked potatoes, finely chopped
Salt and pepper to taste
1 tsp Paprika
425 g (14 oz) Canned minced clams
75 g (3 oz) 3/4 cup Parmesan or Cheddar cheese, grated
75 ml (3 floz) 3/8 cup Double (heavy) cream
4 slices Bacon, grilled (broiled) and crumbled

method

1. Melt the butter in a frying-pan. Add the onion and potatoes and fry until the onion is soft.

2. Stir in the seasonings and clams and cook for 10 minutes, pressing down on the mixture occasionally. Stir gently to release some of the crust from the bottom and then press down.

3. Combine 50 g (2 oz) 1/2 cup of the cheese and the cream, and stir into the mixture. Cover and cook for a further 2 to 3 minutes, or until the cheese has melted.

4. Top with the remaining grated cheese and crumbled bacon before serving.
