1. Crush together the cinnamon, garlic and salt and spread this paste over both sides of the chops. Lay the chops in a flat dish. Pour over the cider and the cider vinegar and marinate at room temperature for 4 hours.
2. Heat the grill without the grid to high. Brush the grid with oil.
3. Remove the chops from their marinade and lay them on the grill rack. Grill them, turning once, until they are golden brown and cooked through, about 15 minutes.
4. Place the chops on a warmed serving dish and keep warm. Remove the grill rack and set the grill pan on top of the stove on a medium heat. Pour in the marinade and bring to the boil, stirring in the crusty bits from the bottom of the pan. Simmer for 2 minutes, then spoon the cider sauce over the chops and serve at once.
