1. Twist the core out of the lettuce and ease out the centre leaves. Save the outer leaves for another salad. Wash gently, dry. Place lettuce and radicchio leaves in a salad bowl.
2. Very thinly pare the rind from the lime and cut into tiny julienne strips. Squeeze
the juice. Reserve.
3. Crush the garlic into the base of a grill pan. Arrange the bacon on the rack and grill until crisp and golden.
4. Finely chop the bacon. Stir the lime juice into the bacon fat in grill pan, add the chopped bacon and place under the grill to heat through.
5. Pour the hot bacon mixture over the leaves and toss to coat. Sprinkle with lime and serve at once.
