Beetroot And Tomato Soup

ingredients

serves 4
1 oz (25 g) butter
8 oz (225 g) raw beetroot, peeled and grated
1 small onion, peeled and chopped
1 tsp ground cumin
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1 1/2 pints (900 ml) chicken stock
8 oz (225 g) tomatoes, peeled, deseeded and chopped

garnish:

lemon slices, parsley

method

1. Melt butter and gently fry the beetroot and onion until the onion is transparent.

2. Add spices and cook, stirring for 1 to 2 minutes.

3. Add stock and tomatoes, season with freshly ground black pepper. Cover and simmer for about 30 minutes, stirring occasionally, until beetroot is tender.

4. Cool, liquidise until smooth. Reheat and garnish.

This is a lovely recipe. I grow my own beetroots, and had more than i bargained for this year!
So i found this recipe, you can make this in a big batch and then freeze it.
If you want to spice it up a bit, whack a chopped chilli in at the same time as the onions. it's delightful. A proper winter warmer.
