Potatoes are very popular in Indian cooking here's a crunchy, mildly spiced dish.
ingredients
1 lb (450 g) small potatoes, washed
1 tbsp vegetable oil or clarified butter
1 onion, finely chopped
1 small chilli, finely chopped, with seeds removed
1/2 tsp ground cumin
1 tsp ground coriander
1/2 tsp crushed coriander
2 tbsps water
method
1. Cook the potatoes in boiling salted water until tender. Drain.
2. Heat the oil in a frying pan, and fry the onion until golden brown. Stir in the chilli, cumin and coriander and cook for a further 2 minutes, stirring.
3. Add the potatoes, water and seasoning. Cook uncovered until the water has evaporated, and the potatoes are lightly browned.
