Pot Roasted Silverside with Ham

ingredients

serves 8
1.5 kg (3 lb) silverside (beefcut from the rump)
6 tsp prepared mustard
200 g (6 1/2 oz) smoked ham, sliced
2 tbsp cooking oil
1 tsp salt good pinch cayenne pepper
2 tbsp chutney
3/4 cup (6 fl oz) 180 ml meat stock
5 tsp plain flour
125 ml (4 fl oz) plain yoghurt

method

1. Spread 2 tsp of the mustard over ham slices and freeze until firm.

2. Cut into 5 mm (1/4 inch) strips and lard the silverside.

3. Brown meat in heated cooking oil in a heavy-based saucepan. Add salt, cayenne pepper, chutney and remaining mustard to meat stock and heat.

4. Add to meat, cover with lid, reduce heat and simmer for 1 1/2 to 2 hours or until meat is tender.

5. Thicken sauce with a flour and water paste, then remove from heat and stir in yoghurt.

6. Carve meat and serve with the sauce.
