1. Trim and wash the celery. Cut the sticks in 5 cm /2 in lengths.
2. Fry the onion in the butter or margarine in a large pan. Add the celery and walnuts. Cook for a few minutes, then pour in the stock.
3. Simmer uncovered for 25 - 30 minutes until softened. Season with soy sauce. Serve immediately.
Cook's Tips
To keep a head of celery fresh, store it on a cool windowsill with root end in a jug of water.
