This recipe for fruit tea bread uses mixed fruit, but you can include raisins, currants, and any other kind of dried fruit that you like.

275 g (10 oz) mixed dried fruit
1 cup (180 g) soft brown sugar
1/2 pt (275 ml) cold tea
1 egg
2 2/3 cup (300 g) self-raising flour
3 tbsp orange marmalade
method
1. Measure the dried fruit and sugar into a basin. Pour cold tea over it and stand several hours (overnight if possible).
2. Mix in the egg, marmalade, and flour and mix thoroughly. Add milk if necessary to thin the mixture.
3. Pour mixture into 9x5x3-inch loaf tin or two small loaf tins.
4. Bake at 160°C (350°F) gas mark 4 for 90 minutes (60 minutes or less if divided into two tins).
