1. Put the beef strips in a shallow bowl. Rub them with salt, pepper, ginger and cornflour (cornstarch) and set aside for 10 minutes.
2. Heat the oil in a frying-pan. Add the root ginger and stir-fry for 2 minutes.
3. Add the beef strips and stir-fry for 3 to 5 minutes, or until they are cooked through.
4. Transfer the strips to a warmed serving dish and sprinkle over the spring onions (scallions). Serve at once.
