Ginger Beef

ingredients

serves 4
1/2 kg (1 lb) Fillet or rump steak, sliced with the grain into thin strips
Salt and pepper to taste
1 tsp Ground ginger
2 Tbs Cornflour (cornstarch)
50 ml (2 fl oz) 1/4 cup Sesame oil
25 g (1 oz) 3 Tbs Fresh root ginger, peeled and finely chopped
2 Tbs Chopped spring onions (scallions)

method

1. Put the beef strips in a shallow bowl. Rub them with salt, pepper, ginger and cornflour (cornstarch) and set aside for 10 minutes.

2. Heat the oil in a frying-pan. Add the root ginger and stir-fry for 2 minutes.

3. Add the beef strips and stir-fry for 3 to 5 minutes, or until they are cooked through.

4. Transfer the strips to a warmed serving dish and sprinkle over the spring onions (scallions). Serve at once.
