method
1. Heat the oven to moderate, 180°C, Gas 4.
2. Mix the flour and salt together. Rub in the fat, stir in the sugar, desiccated coconut and baking powder.
3. Bind to a stiff paste with the egg yolk.
4. Knead well and roll out just under 1cm thick on a lightly floured surface.
5. Cut into rounds with a 5cm cutter.
6. Re-roll and re-cut any trimmings.
7. Place on a greased baking sheet.
8. Prick the top of each biscuit in 2 or 3 places.
9. Bake for 15-20 minutes or until firm to the touch and pale golden brown.
10. As soon as the biscuits are cooked, brush with warm jam glaze and sprinkle with coconut.

Needs water

Hi there, cooked this today and the blend would not mix properly until water was added to the mixture... the egg yolk wasnt enough to bind the whole mixture... tastes amazing too...

We used milk

It didn't want to mix very well so we added about 2 more yokes and some milk and a tad bit more butter.

Adding some chocolate chips

I added 50 grams of chocolate chips and then added 4 medium sized splashes of milk and then a little bit more butter and that made them taste REALLY GOOD!!!
You should try it.
It is a great combination!
