Beef Casserole with Potatoes (Wahgunyah steak)

ingredients

serves 4
1 apple
1 onion
2 stalks celery
25g (1 oz) cooking fat or oil
450g (16 oz) cooked braising steak
3 tbsp tomato puree (paste)
1 tbsp Worcestershire sauce
1 1/4 cups (10 fl oz) 300 ml brown stock
8 oz (225 g) cooked potato, mashed
1/2 stick (2 oz) 50 g butter
Salt and pepper to taste

method

1. Peel and core the apple and slice with the onion and celery.

2. Saute the mixture in the fat until golden brown.

3. Add the cooked steak, puree, Worcestershire sauce and stock and bring to a gentle simmer. Cook for 10 minutes.

4. Beat the mashed potato with butter and pipe a border round a serving dish.

5. Pile the casserole mixture in the middle of the potato and brown in a hot oven.
