Beetroot and Potato Salad

ingredients

serves 4
4 medium beetroot (beet)s
2 medium potatoes
2 large spring onions, chopped
1 tbsp parsley, chopped
salt and pepper to taste
oil and vinegar to dress

method

1. Bake the beetroots and the potatoes in the oven until tender.

2. Allow to cool slightly, then skin and slice them.

3. Arrange alternate beetroot and potato slices on a flat serving dish and garnish with the spring onions.

4. Put the parsley, seasoning, oil and vinegar into a jar with a screw top lid.

5. Shake well and pour the dressing over the salad.
