Potato and Breadcrumb Omelette

ingredients

serves 4
6 medium potatoes
1/2 stick (2 oz) 50 g butter
Yolks of 6 medium eggs
Whites of 4 medium eggs
1 cup (2 oz) 60 g fresh breadcrumbs
Salt and pepper to taste

method

1. Boil the potatoes until tender, then drain and dry off.

2. Mash well with 25 g (1 oz) of the butter.

3. Add breadcrumbs, yolks and whites of eggs, seasoning and mix well with the potato.

4. Melt remaining butter in an omelette pan and pour in the potato mixture and cook for 5 minutes, stirring gently, until almost set.

5. Finish by placing under a very hot grill until nicely browned.
