75 g rolled oats
1 cup (110 g) plain flour (All purpose)
3/4 cup (150 g) sugar
2 oz (50 g) desiccated coconut
3/4 stick + 1 tbsp (3 1/2 oz) 100 g butter or margarine
1 tbsp golden syrup (substitute light corn syrup)
1 1/2 tsp Bicarbonate of soda (Baking soda)
2 tbsp boiling water
fat for greasing

method

1. Heat the oven to warm, 160°C, Gas 3.

2. Mix the rolled oats, flour, sugar, and coconut together.

3. Melt the butter and syrup gently together.

4. Mix the soda with the water, add to the melted mixture and stir into the dry ingredients.

5. Spoon dessertspoonfuls of the mixture on to a lightly greased baking sheet, leaving plenty of space between them.

6. Bake for 20 minutes. Cool on the sheet.
