1 lb (450 g) potatoes, peeled and cut into 6mm (1/4 in) slices
2 cup (225 g) 8 oz cooking (tart) apples, peeled, cored and sliced
8 oz (225 g) streaky bacon, cut into small pieces
1 tbsp Muscovado sugar
2/3 cup (150 ml) 1/4 pt meat stock
Salt and pepper to taste
8 oz (225 g) potato puff pastry
Cold milk
method
1. Put a pie funnel in the middle of a suitable dish.
2. Arrange layers of potato, apple and bacon around it.
3. Sprinkle on the sugar, salt and pepper.
4. Pour over the meat stock.
5. Cover with the pastry and cut the trimmings into suitable shapes for a garnish.
6. Brush with cold milk and bake in the oven Gas mark 4, 350°F (180°C) for about 90 minutes, until the pastry is well-risen and golden brown.
