Creole Potato Salad recipe

ingredients

1 lb (450 g) potatoes, boiled and sliced
1 1/4 cups (10 fl oz) 300 ml whole prawns, cooked and peeled
6 tbsp French dressing, warmed
1 lettuce, green, Iceberg
1 lettuce, red, Radicchio
2 medium eggs, hard boiled (cooked) and shelled
2 chilli peppers, deseeded and diced
Black pepper to taste

method

1. Mix together the sliced potatoes and prawns.

2. Pour the French dressing over the mixture.

3. Arrange on a bed of lettuce and garnish with slices of hard boiled egg, diced chillies and ground black pepper.
