Potato and Chilli Salad

ingredients

serves 4
1 tbsp cardamon seeds
1 cinnamon stick, about 2.5cm (1 in)
1 tsp whole cumin seeds
1 tsp cloves
1/2 tsp grated nutmeg

for the salad

1 lb (450 g) new potatoes, small
2 small green chillies, chopped
2 tbsp lemon juice
1/2 tsp garam masala
1/2 tsp caraway seeds, ground
1 1/2 tsp salt

method

to make garam masala

1. Grind all the spices in a coffee grinder, or liquidiser until a fine powder is obtained.

2. When made, this spice should be stored in a tightly lidded glass container, away from light and heat.

3. Only make small quantities which will be used up fairly quickly, as the spice becomes less aromatic with age.

to make the salad

1. Scrub the potatoes and cook them in their skins in boiling, salted water until just tender.

2. When cool enough to handle, peel and slice.

3. Mix together the chopped chillies, which have been deseeded, lemon juice, garam masala, ground caraway seeds and salt.

4. Carefully combine the potatoes and spices.

5. Place in a shallow dish and chill before serving.
