1. Remove the rind from the ham or gammon and snip the fat at intervals to prevent curling.
2. Put the slices or steaks in a frying pan with a very little water, heat to simmering point, and simmer for 10 minutes, turning them once.
3. Drain. Lay the slices or steaks in an overlapping layer in a large, shallow, ovenproof baking dish.
4. Mix together the sugar and breadcrumbs, and spread it over the slices or steaks, then trickle the pineapple juice over them.
5. Bake, uncovered, in a moderate oven, 180°C, Gas 4, for 25 minutes.
6. Meanwhile, peel, core, and cut the apples into rings, 2cm thick (approx).
7. Melt the margarine in a frying pan, and fry the rings until tender but not soft.
8. Decorate the cooked dish with the apple rings, and serve at once.
