1. Poach the cod if required, and remove the skin when cool.
2. Separate the flesh into large flakes.
3. Melt the butter in a saucepan, add the onion, and fry for 2-3 minutes without browning.
4. Add the fish and sprinkle it with the chopped parsley, lemon juice, and a good pinch of salt and pepper.
5. Cook over low heat for 5 minutes, stirring gently all the time.
6. Serve with boiled potatoes.
