1. Remove the rind from the gammon steaks and snip the fat at intervals to prevent curling.
2. Place on a grill rack and season with pepper to taste.
3. Cook under a moderate grill, turning once, for 10-15 minutes depending on the thickness of the steaks.
4. When cooked, transfer the steaks to a warmed serving dish and keep hot.
5. Skin the onion and chop it finely.
6. Melt the fat in a pan and cook the onion gently for 5 minutes without browning it.
7. Draw the pan off the heat and stir in the marmalade and vinegar, with any fat and juices left in the grill pan.
8. Return to the heat and heat to boiling point, to reduce slightly.
9. Spoon the sauce over the gammon steaks.
10. Garnish with chopped parsley and serve at once.
