Grilled Shad recipe

ingredients

2 shad (1 kg approx)
2/3 cup (150 g) butter

for the marinade

scant 1/2 (us) cup (100 ml) walnut or olive oil
juice of 1 lemon
thyme leaves, fresh or dried
salt and pepper
2 bay leaves
parsley stalks

for the garnish

parsley sprigs

method

1. Clean the fish and make several slashes through the skin on each side.

2. Mix together the ingredients for the marinade and marinate the fish for 1 hour; then drain.

3. Melt the butter and brush it over the fish.

4. Place the fish on a grill rack, and grill gently for 15 minutes, turning once, and basting frequently.

5. Serve very hot, garnished with parsley sprigs.
