1. Soak the herrings overnight. Skin and bone them; then rinse well.
2. Skin the onion and peel the apple.
3. Separate the egg yolks from the whites.
4. Cut the crusts off the bread.
5. Mince together the herrings, onion, apple, both egg whites, 1 yolk, and the bread.
6. Add vinegar and sugar to taste.
7. Mash well and serve decorated with the remaining egg yolk, sieved.
