method
1. Remove the rind from the steaks and snip the fat at intervals to prevent curling.
2. Mix together the mustard, cinnamon, and sugar, and coat the steaks with the mixture on both sides.
3. Place them in a shallow, lightly greased ovenproof baking dish, in one overlapping layer.
4. Pour in just enough milk to cover them.
5. Bake, uncovered, in a cool oven, 150°C, Gas 2, for 45 minutes.
6. Cover the dish loosely with foil if the milk dries up during this time, or trickle in a very little more milk.
7. The dish should be moist.
8. Serve from the dish.
