method
1. Use only the white hearts of the endive (the outside of the endive can be braised);
2. divide the tufts into pieces.
3. Place in a salad bowl.
4. Chop the bacon finely.
5. Put into a small frying pan and fry until the bacon is crisp and golden.
6. Add the bacon, with its fat, to the endive.
7. Season, add the vinegar and toss well together.
