method
1. Remove the stalks from the spinach, wash the leaves well in cold water, and dry thoroughly.
2. Skin and crush the garlic and add to the dressing with the mustard.
3. Pour over the spinach and toss lightly.
4. Skin the onion, cut about 3 slices into rings, and chop the rest finely.
5. Add the chopped onion to the salad and toss again.
6. Turn into a salad bowl and garnish with the onion rings before serving.
