Raw Mushroom Salad

ingredients

serves 4
4 cup (350 g) button mushrooms
1 tsp French mustard
scant 1/2 (us) cup (100 ml) French dressing made with lemon juice
1 tbsp chopped chives

method

1. Clean the mushrooms but do not peel them. Cut into thin slices.

2. Add the mustard to the dressing and pour over the mushrooms; toss lightly.

3. Leave the mushrooms to marinate in the dressing for at least 30 minutes before serving.

4. Sprinkle with the chopped chives.
