750 g fresh shelled or frozen peas
1/2 small onion
2 tbsp (1 oz) 25 g butter
2 oz (50 g) lean cooked ham
1 tsp flour
250 ml general household stock
a pinch of sugar
a pinch of grated nutmeg
salt and pepper
method
1. Boil or steam the peas until just tender.
2. Skin and chop the onion finely.
3. Melt the butter in a pan and fry the onion gently until golden.
4. Chop the ham finely and add to the pan with the flour. Cook, stirring, for 1-2 minutes.
5. Add the peas, stock, sugar, and nutmeg. Cover the pan and simmer gently for 10 minutes.
