1. Halve or quarter the chestnuts.
2. Use 1 stick of celery to make celery curls (p67).
3. Chop the rest finely.
4. Quarter, core, and dice the apple, and mix quickly with the mayonnaise to preserve the colour.
5. Add the chestnuts and celery and toss lightly.
6. Wash the lettuce, dry thoroughly, and place round the edge of a salad bowl.
7. Pile the chestnut mixture into the centre and garnish with the celery curls before serving.
