Carrot and Orange Salad

ingredients

serves 4
300 g carrots
3 tbsp French dressing
2 oranges

for the garnish

Watercress (salad cress) sprigs

method

1. Scrape the carrots and grate finely.

2. Pour over the dressing and toss lightly.

3. Peel the oranges, discarding all the white pith, and cut into slices.

4. Pile the grated carrot into the centre of a serving dish.

5. Arrange the orange slices round the edge and garnish with watercress sprigs before serving.
