ingredients
makes 100 ml
1/2 tsp made English mustard
1/4 tsp salt
1/4 tsp caster sugar (superfine granulated)
4 tbsp double cream (heavy cream)
1 tbsp malt or wine vinegar
1 tsp tarragon vinegar
method
1. Mix the mustard, salt, and sugar together.
2. Stir in the cream. Add the vinegars, drop by drop, beating the mixture all the time.
