1 large cucumber
1 tsp salt
3 tbsp French dressing
1 tbsp chopped parsley
1 tsp chopped tarragon
method
1. Slice the cucumber thinly and salt it. Rinse and place in a serving dish.
2. Pour over the dressing and sprinkle with the herbs before serving.
Note To salt cucumber, slice thinly and place in a large colander. Sprinkle over 1 tsp salt and leave for 30—40 minutes to drain. Remove, pat dry and use as required.
