Petits Pois a la Francaise

ingredients

serves 6
750 g fresh shelled or frozen peas
1 lettuce heart
1 bunch spring onions
1/2 stick (2 oz) 50 g butter
salt and pepper
a pinch of sugar

method

1. Shred the lettuce and chop the spring onions.

2. Melt the butter in a pan, add the lettuce, spring onions, peas, seasoning, and sugar.

3. Cover and simmer gently for 10-15 minutes or until the peas are very tender.

4. Season again if required before serving
