A refreshing salad, Atjar Ketimun, which can be made ahead; it improves if well chilled before serving. Use firm, slightly underripe tomatoes so the flesh does not collapse when cut into dice.

2 onions
coriander or parsley sprig to garnish
For the dressing
4 tablespoons olive oil
1 tablespoon wine vinegar
pinch of mustard powder
1 teaspoon sugar
1 tablespoon chopped fresh herbs, for example, coriander, parsley, and basil
salt and pepper
method
1. Thinly slice the tomatoes and onions, and arrange in a serving dish.
2. To make the dressing, put all the ingredients in a screw-topped jar and shake well. Pour the dressing over the tomato and onion. Garnish with a sprig of coriander or parsley.
Cook's Tip
Alternative idea: add grated orange rind to the dressing and use finely chopped fresh rosemary instead of the basil. Good with grilled lamb or pork sausages.
