Bean Sprout Salad

ingredients

serves 4
250 g bean sprouts
100 g Chinese leaves
2 sticks celery
1 small orange
3 tbsp French dressing or vinaigrette sauce
salt and pepper

method

1. Pick over the bean sprouts, wash well, and dry thoroughly.

2. Shred the Chinese leaves and chop the celery finely.

3. Peel the orange, discarding all the white pith.

4. Cut into slices, then cut each slice across into quarters.

5. Put the sprouts, cabbage, celery, and orange into a bowl.

6. Pour the dressing over the salad and toss lightly. Season to taste.
