Red Cabbage with Pears and Cloves

ingredients

serves 6
1 medium red cabbage
2 British pears
6 whole cloves
2 tbsp red wine vinegar
salt and freshly ground black pepper
25 g butter
1 tsp clear honey

method

1. Cut the cabbage in half and remove the centre core carefully with a sharp knife, then thinly shred the cabbage and place into a pan.

2. Peel the pears and grate coarsely, add to the cabbage with the cloves, red wine vinegar, salt and pepper, butter and hone)

3. Cover with a tight-fitting lid and cook over a low heat for 30 minutes, stirring from time to time.
