Grilled Sweet Potatoes with Feta and Olives

ingredients

serves: 4
large sweet potato 1, about 500 g (1 lb 2 oz) total weight
olive oil 4 tbsp, plus extra for brushing
feta cheese 200 g (7 oz)
herbes de Provence 2 tsp
pitted black olives 50 g (2 oz), chopped
garlic clove 1, crushed
fresh flat-leaf parsley to garnish

method

1. Cut the sweet potato lengthways into eight wedges. Put them in a pan of boiling water, bring back to the boil, simmer for 3 minutes, then drain and rinse in cool water. Drain, dry well and brush lightly with olive oil. Season, then barbecue or grill for 10 to 15 minutes or until well browned on all sides and cooked through.

2. Meanwhile, mash the cheese, herbs, chopped black olives, garlic and olive oil together. Serve the sweet potato with the feta cheese mixture, garnished with parsley.
