25 cm (10 in) thin pizza base
2 tbsp olive oil
225 g (8 oz) firm tomatoes , thickly sliced
150 g (5 oz) asparagus tips , blanched
100 g (3 1/2 oz) large flat mushrooms , roughly chopped
1 tbsp chopped fresh tarragon
150 g pack mozzarella , drained and sliced
method
1. Preheat the oven to 200‚°C/180‚°C fan oven/Gas Mark 6. Put the pizza base on a baking sheet and brush with 1 tablespoon of the olive oil. Scatter over the tomatoes, asparagus, mushrooms and tarragon, then season with salt and black pepper.
2. Arrange the mozzarella on top, season with more black pepper and drizzle with the remaining oil. Bake for 18 to 20 minutes or until the cheese is lightly browned.
