Baked Soya Beans and Vegetables

ingredients

serves 6
1 medium sized onion
1/2 green pepper
1 medium sized carrot
1 stick of celery
2 tbsp margarine
450 g cooked soya beans
2 tbsp molasses
3 tbsp chopped parsley
1/4 tsp dried thyme
1/4 tsp dried savory
salt and pepper
50 - 75 ml tomato juice
medium oatmeal

method

1. Skin the onion and chop it finely with the pepper.

2. Grate the carrot coarsely, and slice the celery thinly.

3. Grease a medium sized ovenproof casserole with a little of the margarine.

4. Mix together the vegetables and soya beans.

5. Warm the molasses and stir it into the vegetables.

6. Add the herbs and salt and pepper to taste.

7. Turn the mixture into the dish and pour over 50 ml tomato juice.

8. Sprinkle thickly with oatmeal.

9. Melt the remaining margarine and sprinkle it over the oatmeal.

10. Cover the dish, and bake in a moderate oven, 180°C, Gas 4 for 45 minutes.

11. Pour over a little extra tomato juice if the contents seem dry during this time.

12. Remove the lid and bake for a further 15 minutes.

13. Serve hot from the dish.
