Poire Belle Helene

Poire Belle Helene is a French ice-cream recipe with vanilla ice-cream, chocolate sauce and cream.

ingredients

serves 4
4 firm ripe pears
250 ml vanilla ice cream
250 ml chocolate sauce
125 ml (4 fl oz) double cream (heavy cream)

for the decoration

25 g (1 oz) crystallized violets

method

1. Peel the pears, cut them in half, and remove the cores.

2. Place a scoop or slice of ice cream in each of 4 dishes.

3. Top with the pear halves and mask with chocolate sauce.

4. Whip the cream until stiff, and pipe a large rose on top of each portion.

5. Decorate with the crystallized violets
