1 lb (450 g) potatoes, peeled, mashed and passed through a ricer
1 cup (110 g) icing sugar (confectioners sugar), sifted
110 g (4 oz) candied peel (candied fruit), chopped
1/2 stick (2 oz) 50 g butter, melted
1/2 tsp vanilla essence
2 medium eggs, separated

method
1. Mix together the potatoes, icing sugar, peel, melted butter, vanilla and beaten egg yokes.
2. Whisk the 2 egg whites until stiff and fold into the mixture. Add a little milk if the mixture is too stiff, then pour into a greased 20cm (8 in) cake or loaf tin.
3. Bake in the oven Gas mark 4, 350°F (180°C) for 45 minutes.
