100 ml (4 fl oz) salad oil
finely grated rind and juice of 1 lemon
2.5 ml (1/2 tsp) caster sugar
salt and freshly ground pepper
175 g (6 oz) green pepper, seeded and thinly sliced
2 crisp green eating apples, cored and thinly sliced
2 bunches watercress, trimmed
method
1. Put the oil, lemon rind and juice, sugar and seasonings into a bowl and mix well. Add the green pepper and apple and toss.
2. Just before serving add the watercress and turn until lightly glistening.
