Chicory Soup (Microwave)

ingredients

to serve 4
4 Heads of Chicory
3 tbsp Butter
1 tbsp Flour
2 pints (1 litre) Hot chicken stock
2 tsp Sugar
Salt and pepper
6 tbsp Dry vermouth

method

1. Chop the chicory and put in a large bowl with the butter. Cover and heat on HIGH for 6 minutes.

2. Stir in the flour. Then blend in the stock, sugar, salt and pepper. Heat on HIGH for 10-12 minutes.

3. Stir in the vermouth. Cook for 1-2 minutes more, then serve garnished with freshly made, hot croutons.
