1. Cut the rind and excess fat off the chops and season the chops with salt and pepper. Carefully cut each chop horizontally, leaving joined at the bone.
2. Mix together the onion, orange rind, cashew nuts, sage, mustard, breadcrumbs, seasoning and bind with the egg.
3. Place the stuffing inside the chops. Brush with the oil and cook under a medium grill for 8 - 10 minutes on each side or until the chops are golden and the stuffing is cooked. Serve garnished with orange slices and parsley sprigs.
For a change, substitute lemon rind and almonds for the orange rind and cashew nuts in this stuffing.
