Spicy Cauliflower Fritters

ingredients

1 cauliflower
50 g seasoned flour
2 beaten eggs
75 g white breadcrumbs
50 g Parmesan, grated
1 tsp chilli powder
1 litre of oil
crème fraiche and black pepper to serve

method

1. Trim and divide cauliflower into small florets, boil for 5 minutes, then drain.

2. Using 3 bowls, add seasoned flour to one, beaten eggs to the second, and white breadcrumbs, Parmesan and chilli powder to the third.

3. Heat the oil in a large pan or deep-fat fryer.

4. Dip florets in flour, egg, then bread crumb mixture, to coat.

5. Deep-fry in batches for 2 to 3 minutes, then drain on kitchen paper.

6. Serve with crème fraiche and black pepper.
