Spaghetti with Spicy Sausage Balls

ingredients

serves 4
1 tbsp sunflower oil
1 onion, chopped
2 cloves garlic, finely chopped
1 red chilli, deseeded and finely chopped
2 tbsp sweet pickle
50 g fresh white breadcrumbs
454 g pack pork sausage meat
400 g can chopped tomatoes with herbs
300 ml apple juice
2 tbsp tomato purée
300 g spaghetti
chopped fresh parsley (optional)

method

1. Heat the oil in a frying pan and add the onion, garlic and chilli. Fry over a medium heat, stirring, until the onion has softened.

2. Remove from the heat and tip into a large mixing bowl, adding the sweet pickle, breadcrumbs and sausage meat With clean hands, mash the mixture together

3. Tear off into walnut-sized lumps and shape into roughly 20 balls between the palms of your hands.

4. Heat a large frying pan, add the balls (they don't need any extra oil) and cook, stirring, over a high heat to seal all over Reduce
the heat, then add the chopped tomatoes, apple juice and tomato puree. Simmer gently, stirring occasionally, for 20 minutes, until the sausage balls are cooked through.

5. Meanwhile, bring a pan of salted water to the boil and cook the pasta according to the packet instructions Drain well, pile into pasta bowls and top with the sausage balls
