Stir fried Vegetables with Oyster Sauce recipe

This delicious vegetable dish is eaten all over the Far East. The oyster sauce gives it a special richness and can be found in almost any large supermarket. The vegetables should still be crisp when served.

1. Peel and slice the carrots into thin rounds. Divide the broccoli into florets and coarsely chop the stems. De-seed and core the red pepper and cut it into matchsticks.
2. Top and tail the green beans and cut them into thirds. Trim and slice the spring onions and peel and chop the garlic.
3. Heat the vegetable oil and 2 tablespoons of the sesame seed oil in a wok or large frying pan. Add the garlic and stir for about 1 minute.
4. Then stir in all the remaining vegetables except the bean sprouts and add the oyster sauce. Stir-fry for 3-4 minutes.
5. Add the remaining ingredients and stir-fry for another 2 minutes. Sprinkle the lime juice over the vegetables, season and serve immediately.
