The Ugli fruit is a cross between a tangerine and a grapefruit. When combined with the pink flesh of the ruby grapefruit, and the red flesh of the blood orange, the Ugli fruit makes a colourful dessert.

h2>For the Dressing/h2>
6 tablespoons clear honey
2 level tablespoons crystalised orange peel, chopped
6 green cardamom pods, seeds crushed to powder
2 tablespoons rose water
method
1. Place all the ingredients for the dressing in a small saucepan and stir together over a moderate heat for 2 minutes.
2. Draw from the heat and pour into a china dish. Leave to cool.
3. Peel all the fruit and neatly trim away the pith using a sharp knife. Cut each fruit lengthways into 4 pieces and slice each piece thinly into segments.
4. Arrange over 4 dessert plates in fan shapes, using the largest of the fruits at the top of the fan and the smallest towards the centre. Add 1 piece of lime at the base.
5. Pour the honey dressing over the fruit and leave to chill in the refrigerator for 30 minutes.
